High Protein Corn Bean Salad Recipe

This can be a great lunch, a chip dip, or a side for tacos!

Ingredients
Handful of chopped cilantro
1 can or bag (frozen) corn
1 can of Great Northern beans (can be subbed for black or pinto)
1/2 red bell pepper, diced
1/2 red onion, chopped
1 roma tomato, goo removed, diced
1/2 cup cotija or feta cheese, optional
Sauce
1 large spoonful of mayo
Juice of 1/2 limes or lime juice
1/2 tsp salt
1/2 tsp smoked paprika
1 tsp garlic, minced or powder
Instructions
Rinse/drain corn as necessary. Broil on a sheet pan with oil and sprinkle of above spices for 10 mins or until charred. I also add a sprinkle of cayenne.
Whisk sauce ingredients in large bowl, then add remaining chopped ingredients. Once the corn is cooled, add to bowl and mix.
